Pot-luck Recipes

Easy Cobblers | Cajun Boil Surprise | Potato Jamboree | Pot's O' Gold | Never Ending Sloppy Joes

 

Easy Cobblers

All you need is your favorite can of pie filling, a matching cake mix, and a stick of butter!

Example:  

Black Forest Cherry Cobbler
Cherry pie filling into 9x9 cake pan
Blend butter into chocolate cake mix until crumbly
Sprinkle chocolate crumbs onto of pie filling and back at 375 degrees for approx. 30 minutes.
Scoop out and lay on top of Vanilla Ice Cream


Peach Cobbler
Same as above but with peach pie filling and spice cake mix.

Cajun Boil Surprise

Men love this one!  You will need a Turkey Frier pot with a colander basket.

This is an OUTDOOR event!

Put enough water in the pot to boil a large amount of vegetables and meat - but not so much that when boiling, it boils over the top of the pot.

According the to the directions, add enough "Shrimp & Crab Boil" Cajun spices to flavor the pot.  (McCormick spices has a box with 2 spice bags included called 'GoldenDipt' Shrimp & Crab Boil)

Have everyone who comes to the potluck bring food to add to the pot (that's the surprise)

Suggestions:

  • Crab legs
  • Shrimp
  • Chicken breasts (chicken cooks fast - keep an eye on it and remove before falling apart)
  • Link sausages or brats
  • Cut steak meat  (hamburger falls apart)
  • Clams (please be sure to wash the shells first!)
  • Celery = the whole bunch
  • Corn on the Cob
  • Red Potatoes (white potatoes are like chicken and need to be watched)
  • Onions
  • Carrots
  • Leeks
  • Other

Taking into consideration, the type of meat or vegetable and how quickly it cooks, watch the pot and boil according to the directions on the Cajun boil spice box.

Here's the part the men like ...

Have a table prepared with butcher paper or a clean sheet on top - pull the colander basket from the pot (careful! its hot!)  and just dump onto the clean table.

With plates and forks in hands - guests stab and grab what they want.  Its a wonderful free-for-all and a real ice breaker!

Potato Jamboree

Host home bakes the potatoes. Big and small - washed, buttered and salted and wrapped in foil.

Guests bring the mixins.  Sour cream, chives, bacon bits, broccoli, chili, etc.

Pot's O' Gold

This is a crock pot Pot-Luck!  Anything that can be cooked in a crock pot.  Make sure you have plenty of outlet strips!  Yum!
